Description
Just like it sounds BLT soup. Its a good cold weather soup and if it is made correctly will warm the soul. I reheats well and can be frozen.
Ingredients
- 1 lb bacon ( any will do but if you can get apple wood smoked, that is awsome )
- 1 cn diced tomatoes ( the new fire roasted if possible, if not i like hunts )
- 1 head of iceburg or romain lettuce ( shredded or julliened )
- 2 clv fresh garlic ( minced )
- 2 q organic chicken broth
- 1 pt v8 ( low sodium )
- 1 pn salt ( kosher- i choose kosher because it is free of iodine and other impurities )
- 10 ds grinds of a peppermill ( or 2 teaspoons )
- 3 ds tobasco ( 1 dash = 1 shake above the soup )
- 1 c diced onions ( optional )
Instructions
1-Dice the bacon ( Chef trick- Freeze the bacon and pull it out of the freezer and let thaw half way then dice ) much easier- reserve on side for cooking 2-Open your can of tomatoes and drain ( reserve the juice with the V8 ) hold for cooking 3-Shred your lettuce- or buy it already shredded- hold for cooking 4-Mince your garlic. hold for cooking 5-Pull the tabs off of the stock. hold for cooking 6-open your V8 .hold for cooking 7-Have your salt on a little bowl.hold for cooking
The reason I do all of this ahead of time is because when you start cooking everything you need is right there ready to go ( in chef terms it is called havening your" Mise en place " in order ( hopefully you've all read Kitchen Confidential from Anthony Bourdain ) "Mise" means everything in its place in French.)
Ready to cook?
In a good size soup pot ( a 10 qt ) render your bacon until brown. Add your diced onion ( optional ) and your garlic ( cook for about 1 min ) Add your tomato juice. Reduce by about 1/4 ( it will take about 6 min ). Add your chix stock. Let cook for 15 min ( bring to boil then reduce the heat to a slow simmer ). At this point add the diced tomatoes then add your Salt and Pepper and the Tabasco. Taste and adjust the seasonings the way you like them. Then let the soup cook for an additional 10 min. At this point you can hold the soup for at least an hour or two with no heat . Add your lettuce 10 min prior to serving the first time .
Notes
The onions are optional for the kids sake, if they like them go ahead and incorporate it in
I also add a dollop of mayo on top just before eating it adds a smoothness and creaminess.

a crock?
How would I adapt this recipe to a crock pot situation? I just got one for xmas, and I want to try to use it.
Low and slow
just do everything ahead like the recipe and hold the lettuce till the very end. Cook your bacon in a separate pot just to brown. Then follow the rest of the recipe ignoring the cooking times. Make it during nap time for dinner..

Funny thing
In my original recipe flour was a thix agent. But a guy at the club was on a no gluten diet. So I acquiesced to him and put in corn starch and water ( a slurry ). But I didn't like its reheating properties. Roux is definitely the way to go. Try using whole wheat flour ( better thix properties, flavor
and it is better for you ) the tomatoes can go in just before the final cook with the salt , pepper and tobasco .

After the Meal Review!
We just had this for dinner! My wife and I loved it. You might want to edit the instructions to make sure you include when to add the diced tomatoes. I almost forgot them because I was following the recipe so religiously.
My wife thought it might be nice to add some flour at the beginning with the bacon to thicken it into a roux.
I was thinking that it would be fitting to serve the soup in a bread bowl.
We both agree that lots of lettuce makes it really yummy, and the mayo was a nice touch.
