Description
I'm trying this one for the first time. If it sucks I'll delete it.
Ingredients
- 1 T Olive oil
- 2 eggs slightly beaten
- 1 c italian bread crumbs
- 1 eggplant sliced
- 1 medium onion sliced
- 2 tomatoes sliced
- 1 c Grated parmesan cheese
- 1 c crumbled feta cheese
- 4 sli muenster cheese
Instructions
1. Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch baking dish with cooking spray.
2. Heat the oil in a skillet over medium heat. Place eggs and bread crumbs in 2 separate bowls. Dip eggplant slices in eggs, then in bread crumbs to coat. Fry coated eggplant slices in the skillet until golden brown. Season with salt, and drain on paper towels.
3. In the prepared baking dish, layer eggplant, onion, tomatoes, Parmesan cheese, and feta cheese. Top with strips of Muenster.
4. Bake 30 minutes in the preheated oven, until cheese is melted and bubbly.

I just
finished eating this. It was absolutely wonderful. I would change a couple of things that I did however. I overlapped my eggplant when I layered. This made it harder to serve. I think next time I'll lay the rounds down flat with a tomato on each one, then use more cheese. The dish looks fantastic too. Nice colors. I'd take a picture, but I can't find my camera. I wonder why I'm not worried about that. Anyway, this one's a keeper.

A helpful hint
Hi,
If you cook eggplant, make sure you heavily salt both sides of the cut eggplant and let sit for an hour. When you come back, you'll find a ton of water drops. Wipe off, rinse and dry. That'll take the bitterness out of the eggplant.

Yeah
That's a great tip. I normally do that, but I did not this time. I couldn't taste any bitterness, but that may be because of the feta cheese covering it up.
