Description
Very simple french toast, using no eggs or milk
Ingredients
- 3 Tart apples
- 3 T Sugar
- 1⁄2 t Cinnamon (for the topping)
- 2 t Lemon juice
- 2 c Plain or vanilla soymilk
- 1⁄2 c Apple Butter
- 1 t Vanilla Extract
- 1 t Ground cinnamon (for the batter)
- 1⁄4 t salt
- 12 sli soft crust French bread
Instructions
To make topping:
Coat non-stick skillet with cooking spray (or a pat of butter for you non-vegans like me out there) and heat over medium-high heat. Saute the apples 5 min (or until softened) then reduce heat to medium.
Add sugar and 1/2 tsp cinnamon and cook 5 - 10 minutes, stirring occasionally. Stir in lemon juice and remove from heat.
To make French Toast:
Blend soymilk, apple butter, vanilla, 1 tsp cinnamon and salt until smooth (a blender works best, but if you don't want to have to clean it later just use a wisk) and pour into a shallow bowl.
Coat non-stick skillet with cooking spray (or butter, again) and heat over medium heat. Dip bread slices into batter, coating evenly. Cook 2 - 3 minutes on each side (until lightly browned).
Place two slices of bread on each plate and divide topping amont servings
Notes
This is in the breakfast category, but this makes a mighty fine dinner as well.
