Hey, who doesn't need a little more fiber??? This is an excellent, tasty, and most importantly EASY bread which will definitely help you increase your fiber intake.
Preheat oven to 350
Grease and flour 9X5 loaf pan
Mix cereal, brown sugar, milk, and fruit in large bowl and set aside for 10 - 15 minutes (until cereal becomes mushy)
Add flour, baking powder, baking soda, and cinnamon and stir completely.
Spoon into the loaf pan and bake for one hour. Cool on rack.
I believe this originally came from a WWI or WWII recipe that floated around for a while, hence partially the reason we've dubbed this "Warloaf". The name also comes from the fact that if you are not used to having a nice fiber source in your diet you might notice a little gastrointestinal discomfort the first day or two you eat this (good thing you're an AHD- there is a social stigma attached to flatulence in the workplace, as I recall).
I recommend warming a slice in the toaster oven and then topping with either peanut butter or something like apple butter. I tell you, I am completely hooked on this recipe and would eat it three times a day.
