A very fast recipe that uses the most manly of cooking appliances, the grill, to make a super easy pasta with great depth of flavor.
Core and cut tomatoes in half lenghtwise, toss in 2-4 Tbs Olive Oil, thyme, salt & pepper. Grill over a hot fire, cut side down first, until soft and a somewhat charred, about 6-10 minutes per side. Meanwhile, cook pasta. When tomatoes are done, coarsly chop and toss with the pasta and some additional olive oil (about 2 Tbs). Serve with fresh grated Parmesan cheese. Super easy...and really great depth of flavor.
I wouldn't bother firing up a charcoal grill just for this...that defeats the purpose of a super easy and fast recipe (I use gas, so it's no big deal), but you could use your charcoal grill after something else to grill the tomatoes for the next day...I'd just reheat them in the zapper. Alternative: you could accomplish a similar effect with the broiler if you want to skip the grill completely.
