    <directions>In a skillet, over medium heat, saute' onions in olive oil until almost clear.  Slice sausage diagonally into 1/2-3/4" pieces and add to onions in olive oil.  Continue to saute' until meat is well cooked.  Layer zucchini slices on top of onion-meat mixture, add small amount of water to skillet, cover and cook for about 5 minutes until zucchini is partly tender.  Pour tomatoes on top of zucchini, cover again and simmer for another 5 minutes.  Turn off heat and distribute shredded mozzarella evenly over tomatoes.  If not already included in diced tomatoes can, sprinkle some Italian Seasoning over all and cover until cheese is melted.  Let sit for a few minutes before serving.</directions>
